In summer, in the heat, we lose our appetite. Also, spending the day at the beach takes up most of our time and the last thing we want to do on holiday is cook. Salads, gazpacho, cold and easy dishes become the food of choice for the three months of summer.
Today we show you some healthy and fresh recipes with olive oil and Aloe Vera as the main protagonists. Take note, because they are ideal for eating on the beach or taking on hiking trails.
Andalusian Gazpacho with extra virgin olive oil
If in summer there’s a star dish that’s never missing from any table, that’s the gazpacho. This cream of vegetables is perfect to refresh us when we arrive home after a morning at the beach or to replace batteries when we arrive from work. The recipe is very simple and in less than 10 minutes, you will have a delicious gazpacho ready.
- 1 kilo of tomatoes
- 1 green pepper
- ½ cucumber
- ½ onion
- Hard bread
- Extra virgin olive oil
Dice the tomato, pepper, cucumber, onion and bread and mash in a blender. When the mixture is homogeneous and a little liquid, add a good dash of extra virgin olive oil, a dash of vinegar, a little salt and cumin. Stir everything and you have the first dish of the day prepared.
Salad with Aloe Vera
Salad is perhaps the most practical and used dish in the kitchen. It is quick, simple and we can throw everything we can think of or what we have in the fridge.
Vegetables, legumes, pasta, fruit, meat or fish, we can eat them in a single dish and match perfectly in salads.
To give it a different and more summery touch, in the following recipe we are going to use Aloe Vera. Its properties are not only good for the external body but we can ingest it and make its nutrients act from within.
- A handful of fresh spinach
- 1 pink tomato
- 100 gr. of cooked prawns
- ½ onion
- 2 figs
- 1 penca of Aloe Vera
- Extra virgin olive oil
- Modena Vinegar
- Sesame seeds
First, wash and cut the pink tomato into slices, cut the onion, peel the prawns and do the same with the figs, which will also be cut into four pieces.
Then we prepare the Aloe Vera. Cut a stalk from the plant and wash it. Once washed, cut the ends and remove the skin of the upper and lower area. Be careful with aloin, you must remove it, as it is harmful to health. It has a laxative effect. Once we have removed the skin from the stalk, we are left with the meat or juice of Aloe Vera that we will cut into small cubes.
With all the ingredients cut and prepared, we pass to the plate. Place the spinach, tomato, onion and whole peeled prawns on top. Finally place the chopped figs and aloe vera taquitos.
As a dressing, prepare a vinaigrette with extra virgin olive oil, Modena oil, a few sesame seeds and salt.
Skewer of fruits and Aloe Vera
A different and fun way to eat fruit are skewers. It is also a good option to eat on the beach, as the stick will prevent the fruit from staining with sand.
Just like salads, we can make them with the fruit we want, that we like best or that we have at home. Take advantage of the seasonal fruits that are the richest of the year.

- Brochette sticks
The preparation is very simple and the smallest of the house can help you prepare them. All you have to do is wash, peel and cut the fruits into squares and prick them on the skewer sticks.
For the Aloe Vera, cut a stalk and peel it so that you keep the Aloe Vera juice that you will also cut squares. Remember that you must be very careful to completely eliminate the aloin contained in the Aloe Vera.
Finally, melt dark chocolate and water the skewers with it or place it in a container in which the fruit skewers can be immersed.
Summer is synonymous with holidays and that’s why it’s time to enjoy this time of year. These recipes will take very little time out of your day and are perfect for taking both to the beach and the mountains.
